Palace or speakeasy?
A palace bar costs more and expects smart dress: no dress code is published in the guides read, so call the hotel. A speakeasy is more relaxed but small, hence the value of booking. For hidden addresses see Paris speakeasy bars; to learn to make them, the cocktail workshop in Paris.
