Galette des rois at a glance

Frangipane or almond cream

The two are often confused. Frangipane is a mix of almond cream and pastry cream; almond cream contains only butter, sugar, ground almonds and eggs. Almond cream gives a denser filling with more almond flavour; frangipane is softer and less sweet. Ask your baker what they use: it is the best way to choose to your taste.

Three ways to choose

  • Classic: a frangipane galette from the neighbourhood bakery, often the cheapest and very good; it is the choice of most people.
  • Creative: pastry chefs offer caramel, pecan and maple syrup, or almond and black sesame galettes. The guides cite the pâtisserie Rayonnance (9th), Boulangerie Pompette (4th and 19th), Burgundy (1st) and Ginko (Buttes-Chaumont); check that they are making a galette again in 2027.
  • Budget: for an office lunch or with friends, count the price per slice rather than per galette, and order it two days ahead.

Practical tips

Artisan galettes keep poorly for more than two days: eat it the day before or the same day. Reheat it in a gentle oven for a few minutes to bring back the crisp pastry. If you are travelling to Paris in January, also see what to do in Paris in January, our best bakeries in Paris and the tearooms.
